Fruit Leather is an  Snack with a sour and salty taste, which is prepared from the concentrated and thick juice of fruits such as plums, apricots, apples, peach, kiwi, etc. Different types of Fruit Leather are in the market, Fruit Leather is actually a type of extract taken from fruits, which nutritionists call “extract [concentrate]” and in Arabic it is called “Qamar al-Din” and it is obtained by drying.
Drying is one of the simplest and most common methods of food preservation, which has a lifespan as long as human civilization, and today it is used in different countries in different ways, from traditional methods to industrial patterns for drying.
Nowadays, according to the development of food industry, the methods of preparing fruit leather have evolved and new samples of this product are marketed with health supervision. Some cities in East Azerbaijan province are the poles of production of this product in Persia, which have been offering their products in domestic markets and European countries for many years.
